The Best Potato Salad

You are in for a treat with this potato salad you are going to love it. It’si so easy and absolutely delicious We served it for the King's Coronation celebration and called it “ Royal Potato Salad “ and everyone loved it. We had a lovely time with family and friends and we hope you did something nice too. If we are honest we don’t need a celebration to cook we just love it.

Well back to this potato salad, we like it because it’s a little lighter than the traditional creamy mayo-laden one., which makes it perfect for a family feast. when you are trying to accommodate everyone's dietary requirements. A good Vegan Hard cheese is this one. It does take this potato salad to the next level, trust us whatever you do don’t miss it out.

 The herbs really give it a freshness and flavor boost. Only fresh herbs will do for this recipe so don’t be too strict use what you have in the garden or just one fresh herb the choice is yours but honestly our combination is a winner. Remember the amount of herbs is down to personal preference but if you want a good amount, you need it to be part of the dish not just a garnish.

 If needed halve the potatoes if they are too large. This will help them to absorb all the flavors. We have used frozen peas but use fresh ones if you like, we would love to but in our house, fresh peas are for popping, that's right popping right into our mouth, there just is never any left to use in recipes. 


Ingredients

1 kg Small new potatoes

200g Frozen peas

4 Free range eggs boiled for 8 minutes

100g Vegetarian Parmesan style cheese ( we use Waitrose Vegetarian hard cheese )

1 tbs Olive oil

3 tbs White wine vinegar

10g basil finely chopped

20g parsley finely chopped

10g mint finely chopped

Zest of 1 lemon

Salt and pepper


Method

  1. Boil the washed potatoes for 15- 20 minutes.

  2. Boil the eggs for 8 minutes.

  3. Cook the frozen peas for 2 minutes.

  4. Meanwhile finely chop the basil, parsley and mint.

  5. Mix the oil and white wine vinegar together with seasoning.

  6. Add the chopped fresh herbs and the zest of 1 lemon to the potatoes and mix well.

  7. Add the grated Vegetarians Cheese ( Parmesan )

  8. Slice the eggs in half and add.

  9. Then dress with the oil and vinegar dressing.

  10. Add the peas.

  11. Adjust seasoning if necessary.
