Cinnamon Apple Tarts

Hey there! Autumn is finally here and it's the perfect time to snuggle under a cozy blanket, sip on hot chocolate, indulge in apple crumble with custard, and light up some cinnamon-scented candles. Does that make you hungry? Oh apples pies mmm...

Speaking of baking, we've got an exciting recipe for you this week! The dark mornings can be a bit of a drag, but we're still trying to stay active while also indulging in some comforting treats. We know sugar isn't the healthiest, but this time of year our bodies crave it, so why not treat yourself to some delicious cinnamon apple tarts? They're easy to make and perfect for satisfying your sweet tooth. Plus, the cinnamon kick gives them that perfect autumnal flavor. We have paired them with some creamy custard and a mouth-watering glaze! Puff pastry is a must for these delicious Apple Tarts. We used gluten-free pastry for this recipe, but any pastry will do. The cinnamon sugar topping is also super easy to make and takes these apple tarts to the next level. And don't worry about the measurements - this recipe is in cups since our scales were delayed. Ingredients

2 packs of Puff Pastry

4 Apples

1/3 cup of Granulated Sugar.

1/2tbs Cinnamon

Cream Cheese filling

187 g Soft Cheese full fat (1 tub)

1/4 cup Sugar

Zest and juice of 1 lemon

1 egg

1 tbs Apricot jam .

2 tbsp icing sugar.

Method .

  1. Peel apples , core and halve .Slice into thin slices.

  2. Add sugar and cinnamon into bowl and add apples to coat.

  3. Remove pastry from the fridge 10 mins before use.

  4. Cut in half length ways and 2 cuts equally down to make 6 squares in each pastry sheet giving you a total of 12 squares

  5. Take each corner and press in to the centre (see photo) Then replace in the fridge to keep cool.

  6. Add all the cream cheese ingredients to a bowl but start with only adding half the egg add more later if needed.

  7. Whisk up for a few minutes till mixture thickens

  8. Remove squares from the fridge and share the mixture between them.

  9. Add the apple slices on top of the custard. Save any remaining liquids.

  10. Mix the jam with the liquid from the apples and warm .

  11. Glaze the pastry squares and cook at 200* for 20 /25 minutes.

  12. Mix the icing sugar with some water and drizzle over the warm tarts.
