Hassleback Potatoes with Honey And Goats Cheese
This three ingredient (and a few fresh herbs or dried at a push) recipe is going to blow your mind. Honestly it is so delicious and just simple. People are going to think you have some fancy recipe but its just 3 things potatoes , cheese and honey
To make slicing the potatoes easier place something like a wooden chopstick either side of the potato and slice down till you hit it, this will make sure you don’t slice all the way through, do lots of slices close together to form the hassle back. The sweetness of the honey and saltiness of the goats cheese is a brilliant combination and add to this fresh herbs it’s a combination sensation.
Ingredients
750g new potatoes
1 tbsp olive oil
small bunch of fresh thyme (or 1tsp of dried thyme)
3 tbsp clear honey
80g soft goat’s cheese, crumbled
Method
1. Preheat the oven to 180°C fan.
2. `Wash the potatoes and dry them. Then with a sharp knife, make thin cuts about 2mm apart in the potatoes but don’t cut all the way through. I find the best way to do this is to put something either side of the potato like chopsticks or the handle of wooden spoons, as long they are both the same it will make this job so much easier
3. Put the potatoes in a bowl, drizzle with 1/2 tbs oil and toss to coat, add half the thyme and season well with salt and black pepper.
4. Bake for 30 mins, remove from the oven, cover with the remaining oil and bake for another 30 minutes
5. Remove from the oven, drizzle over the honey and dot with the cheese. Garnish with the remaining thyme and a little black pepper to serve.
