BBQ Pulled Jackfruit Sliders
Hi guys another delicious recipe for you to try. This is a smokey, saucy jackfruit mixture topped with sweet and tangy pickles squashed in a toasted brioche bun that will make your mouth water. This got a big thumbs up from all the family.
This is our favourite way to eat jackfruit at the moment. Jackfruit is now a popular ingredient and found in cans in most supermarkets. We always have a can or two in the cupboard as it absorbs flavours easily, has a good texture and it can make a quick mid week meal. We make a delicious sauce that is rich and intense in flavour and it just uses store cupboard ingredients, so a complete hit. We make a quick pickle of red onion and carrots that is sweet and tangy and gives a well needed bite and crunch to these buns.
This jackfruit recipe can easily be adapted to feed a crowd. The buns are easily changed to make it vegan. So let’s all get munching these scrumptious buns of deliciousness and be warned make plenty, double , triple the recipe because these are going to be a favourite. Another warning napkins necessary
Ingredients
For the BBQ sauce
160g tomato puree
250ml water
50g brown sugar
3 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
1 tsp soy sauce
For the quick pickles
1 red onion ,thinly sliced
1 large carrot, thinly shredded, we use a julienne peeler
Juice of 1 lemon
Juice of 1 lime
2 tbsp apple cider vinegar
pinch of sugar
pinch salt
For the Pulled Jackfruit
2 400g tins of jackfruit
1 tbsp oil
2 tbsp smoked paprika
1 tsp coriander
¼ tsp chilli
salt and pepper
Method
To make the BBQ sauce add all the ingredients in a saucepan, bring to simmer and cook for 5-10min over a low heat, stirring often, leave to cool
Pre heat the oven to 200℃, drain the jackfruit and pat dry with kitchen towel
Pull apart the lumps of jackfruit then put in a large bowl. Mix the oil and spices together and coat the pulled jackfruit with it
Put on a large lined baking sheet and cook for 30 mins
Meanwhile make the quick pickles, mix the citrus juice, vinegar, sugar, and salt together, add to the thinly sliced veg and let sit for 10-15 mins
After the jackfruit has been cooking for 30 mins take out of the oven cover with half the bbq sauce and put back in the oven for another 20-30 mins. Remove from the oven and cover with the remaining sauce
Assemble the sliders, use seeded brioche buns, round lettuce, add the bbq pulled jackfruit and pickled veg and enjoy!
