Air Fryer Harissa Mushrooms

This a great and easy recipe that is full of flavour and can be made really quickly in the air fryer. The mushrooms and chickpeas make a really substantial and filling meal when served with cous cous and salad and will be perfect for either a quick weekday meal or lunches. The sauce for the mushrooms is a perfect balance of sweet and spicy and will be your new go to meal.


Ingredients

- 2 large flat mushrooms

- 1/2 tin of chickpeas

- 2 tbsp tomato puree

- 1 tsp harissa

- 1 tbsp water

- 1 tsp olive oil

- 1 tsp honey

- juice of half a lemon

- 1/8 tsp smoked paprika

- 1 tbsp flaked almonds


Method

  1. Mix together the tomato puree, harissa, water, oil, honey, lemon juice and smoked paprika. Season with salt and pepper.

  2. Coat the mushrooms and chickpeas in the sauce

  3. Put the mushrooms and chickpea mixture on a sheet of foil and bunch the foil together at the top to keep everything contained

  4. Put in the air fryer at 180°C for 12-15 mins

  5. Serve with cous cous and salad, top the mushrooms with the almonds and make sure you drizzle all the flavoursome sauce left in the foil parcel over everything
