Homemade Ginger Lemonade

The sun is finally here in England and we are spending so much time in the garden. This year we decided to mix up our two favourite soft drinks and make a homemade ginger beer and lemonade fusion. This drink is everything you want in a soft drink, sweet and tangy with a great kick of heat from the ginger and to top it all is so refreshing.

This drink is great to take to a party or a picnic, kids and adults alike will love it! It also would pair well with rum, vodka or whiskey so it really is perfect for everyone. But it’s also great just to enjoy yourself at home, its not difficult and once the syrup is made you can keep it in the fridge for 2 weeks and just make up a glass when you fancy one. I do 3 shots of syrup, 1 shot lemon juice and 250ml of soda in a glass of ice for the perfect single serving.

Ingredients (serves approx 5)

For the ginger syrup

100g of ginger, peeled and roughly chopped

1 1/2 cups of granulated sugar

2 cups of water


For the ginger lemonade

125ml lemon juice (approx 4-5 lemons)

400ml ginger syrup

1.25l of soda water


Method

  1. To make the syrup put the chopped ginger, sugar and water in a pan and bring to the boil, boil for 2-3 minutes then simmer for another 5 minutes then leave to cool

  2. Blend the mixture, then strain through a fine sieve or muslin cloth

  3. Mix the ginger syrup and lemon juice in a large pitcher full of ice, then top with the soda. Stir and enjoy
