Mocha Biscotti

We all know how important a cup of coffee is, especially during the chilly winter months. That's why we came up with a recipe that combines two of our favorite things - coffee and chocolate. Introducing our delicious biscotti recipe! Biscotti means twice baked, and that's how these biscuits get their famous hard texture, perfect for dunking in a cup of hot coffee. But, if you're not a fan of dunking, don't worry, these biscuits are just as delicious eaten after the first bake, expect a much softer biscuit. And, the best part? This recipe is super easy to make, as long as you're precise with the weighing. Speaking of which, don't be alarmed when you see the instructions to weigh the eggs. It's just a way to ensure you get the right amount each time, as all eggs weigh differently. Ingredients

3tsp instant coffee

200g plain flour

50g self raising flour

220g cater sugar

2-3 eggs beaten

100g chocolate chips

Method

1. Preheat the oven to 180°C

2. Mix the coffee with 3tsps of boiling water and leave to cool

3. Sift both flours and the sugar into a bowl

4. Weigh the cooled coffee and add beaten eggs until the combined weight is 120g

5. Add the coffee mixture into the dry ingredients along withe the chocolate chips and stir until it becomes a firm dough

6. Knead on a floured surface for a few minutes until it all comes together

7. Split the dough in two and shape into logs, place these on a couple of lined baking trays

8. Bake for 35 minutes until firm and leave to cool on the tray

9. Using a serrated knife cut into around 5cm thick diagonal slices

10. Place slices back on the trays and bake for a further 10 minutes until hard
